Classic Tiramisu

Mascarpone cheese 500 g
Amaretto or Baileys liquor 40 ml
Eggs 6 pcs
Water 200 ml
Sugar 120 g
Savoiardi cookies 100 g
Coffee beans 32 g
Cocoa powder 28 g
Step-by-step recipe
Step 1

Soak the eggs with vinegar for 10 minutes, rinse under the running water. Separate the yolks from whites very carefully so there are no pieces of yolk in the whites.
Step 2
An easier way to do that is to crack an egg on your hand. Then the yolk will stay in your hand and white will just drip into the bowl.
Step 3
Add a pinch of salt to the egg white and whisk until stiff peaks.
Step 4
Whisk the egg yolks with sugar until the sugar is dissolved.
Step 5
Add the chilled mascarpone cheese and stir until combined.
Step 6
Gradually fold in whipped egg whites into the cheese mixture. It is important to stir in clockwise direction.
Step 7
Brew coffee, chill and combine with the liquor.
Step 8
Put some of the cream on the bottom of the dish.
Step 9
Dip a savoiardi cookie in coffee for 2 seconds and put on top of the cream. Keep dipping the cookies until you have an even layer. Cover with the rest of the cream.
Step 10
Refrigerate for 3 hours. Sprinkle the top with cocoa powder just before serving.
