Duck with apples and chocolate sause

Duck legs 4 pcs
Dark chocolate 80 g
Peeled apples 600 g
Shallot onion 75 g
Sugar 100 g
Salt 15 g
Butter 60 g
Pepper to taste
Cocoa powder 20 g
Butter 200 g
Step-by-step recipe
Step 1
Wash and peel the apples.
Remove hearts.
Step 2
In a saucepan melt butter
with sugar, caramelize.
Step 3
Fry the apples in the caramel.
Step 4
Cook chocolate sauce:
In a saucepan fry onion in
duck fat (cut the extra fat
from the duck), add salt,
cocoa and chocolate. Melt
the chocolate and mix the
batter till smooth.
Step 5
Stew the legs in duck fat for
1,5 hours.
Then serve the duck with
apples and chocolate sauce.
