Caraway Biscuits

Ingredients:

  • 180 grams Flour
  • 100 grams Grated Gouda Cheese
  • 120 grams Sour Cream
  • 90 Grams Margarine
  • 10 grams Caraway Seeds
  • 2 tbls Grated Parmesan
  • ½ tea spoon of Bicarbonate
  • 1 tea spoon of Baking powder
  • Salt & Pepper to taste
How to do it:
Step 1
In a bowl mix flour with baking powder, salt and pepper. Add the diced cold margarine and start grinding it with your fingers until it turns into a crumbly composition, but you can still see the pieces of margarine. Do not mix too much so that the margarine does not melt.
Step 2
Add the parmesan, half of the quantity of gouda and the caraway and mix for a few more seconds. Put a little of the cream and mix with a spoon at first then by hand enough to form a dough. No more.
Step 3
Put the dough on a piece of baking paper and spread it in a sheet of suitable thickness. Sprinkle the rest of the grated cheese and fold it in half. Cut the biscuits with a round shape and place them in a tray lined with baking paper.
Step 4
Place in the preheated oven at 180c for about 20 minutes or until slightly browned. Once they are done, put them on a nice platter and enjoy them! :)
Spicy Chicken Curry

Ingredients:

  • 3 tbls of oil
  • 1 onion finely chopped
  • 25 grams of Curry
  • 400 grams of tomatoes
  • 540 grams of boneless chicken breast
  • 150 ml hot water
  • 5-6 coriander leaves
  • 5 grams of turmeric
  • Salt & Pepper to taste


How to do it:
Step 1
Heat up the oil in a big pan and fry the onion at medium fire for 4-5 minutes. Then add the chopped tomatoes and cook at medium temperature. Add the curry and turmeric and let it sizzle for 1 minute.
Step 2
Cut the chicken breast in cubes and add it in the mixture. Cook it at high temperaturae for 2-3 minutes then put the hot water and let it sizzle for 15 minutes.
Step 3
At the end add the coriander, salt and pepper. You can serve it as it is or with plain rice. Enjoy :)
Chili con Carne

Ingredients:

  • 500 grams dry beans
  • 500 grams minced beef
  • 5 onions
  • 1 garlic
  • 10 grams of chili flakes
  • 10 grams of oregano
  • 10 grams of paprika
  • 5 grams caraway
  • 100 ml sunflower oil
  • ½ red paprika
  • 4 tomatoes
  • Salt & pepper to taste

How to do it:
Step 1
One day before soak beans overnight in cold water. The next day boil the beans in salted water for about 60 minutes.
Step 2
In a wok or a large pan, put the oil and fry the onion until brown then add the minced meat. Mix the meat with the onion then add the condiments salt, pepper, finely chopped garlic paprika, oregano & caraway seeds.
Step 3
Separately blanch the tomatoes for 30 seconds, peal them, add it to a blender and whiz then add to the meat. Add 250-300 ml of water and let it simmer for about 15 minutes.
Step 4
Add the boiled beans and the chili flakes over the meat and let it simmer at low heat for another 15 minutes. Stir continuously. Enjoy!


Coriander Guacamole

Ingredients:

  • 3 ripe avocado
  • ½ tomato (without the seeds, finely chopped)
  • Juice from 2 limes
  • 10 gr coriander
  • A couple of coriander leaves for decoration
  • ½ small onion finely chopped
  • 1 garlic
  • 1 small jalapeño pepper
  • Salt to taste
How to do it:
One easy step
In a pestle and mortar or large bowl combine avocados, tomato, lime juice, coriander, onion, jalapeno, and salt. Mix all ingredients and at the end garnish with fresh coriander leaves. Enjoy!


Enibahar Kokkinisto

Ingredients:

  • 1 kg of beef (neck or shoulder)
  • 3-4 onions
  • 450 gr of tomato paste
  • 200 ml olive oil
  • ½ tsp Enibahar
  • ½ tsp ground cinnamon
  • 1 l of water
  • Salt & pepper to taste
How to do it:
Step 1
Heat the oil to a high temperature in a large sauce pan and brown the meat (cook until brown on all sides). Add the tomato paste over the meat stir until equally distributed then add water just enough to cover the meat.
Step 2
Add salt, pepper, cinnamon and enibahar and stir gently to combine everything. Peel the onions and add them whole in to the pan.
Step 3
Make sure the meat is covered with water and lower the heat let it simmer for about 4 hours. Check every 30 minutes and stir, when the meat is tender the dish is done. Enjoy!
Five Spices Tuna Tataki

Ingredients:

  • 600 grams fresh tuna
  • 10 grams five spices
  • 10 grams brown sugar
  • 50 grams white sesame seeds
  • 50 grams black sesame seeds
How to do it:
Step 1
In a bowl mix the five spices, brown sugar, and the sesame seeds (black and white). Slice the tuna and then bath it in the mix.
Step 2
Heat up a pan and put baking paper in it then add the tuna until brown on all sides (30 sec. each side).
Step 3
Put the tuna in the preheated oven at 180c for 3 more minutes. Enjoy!
Ginger and Garlic Carrot Soup

Ingredients:

  • 3 large carrots
  • ½ of white celery
  • 1 tea spoon of ginger
  • 6 gr of garlic
  • 1 large potato
  • 1 onion
  • Salt and pepper to taste
How to do it:
Step 1
Wash and clean the vegetable then cut them in big pieces and put it to boil for 25 minutes in 1,5 L of water. After the vegetables are done, use a vertical mixer to make a fine cream.
Step 2
Add the ginger and the smashed garlic salt and pepper and boil for another 5 minutes. Enjoy!
Mixed Herbs Roasted Chicken

Ingredients:

  • 1 whole free range chicken
  • 20 gr mixed herbs
  • 100 gr of butter
  • Salt and pepper to taste
How to do it:
Step 1
Leave the butter to room temperature until is creamy. Rinse the chicken dry it and make small cuts along the breast and legs.
Step 2
Mix the butter with herbs then start massaging the chicken. Put the chicken in the preheated oven at 180c for 45 minutes. Enjoy!

Mosaic Pepper Shrimp Soup

Ingredients:

  • 1 tsp sun flower oil
  • 4 chopped onions
  • 2 tsp tomato paste
  • 600 ml water
  • 450 gr shrimps
  • 1 tsp chili paste
  • 10 gr mosaic pepper
  • ½ lemon/lime
  • chopped dill
  • Salt and pepper to taste
How to do it:
One easy step
Heat up the oil in a pan and fry the onion for 2 minutes. Add the shrimps and keep frying for another 2 minutes. Add the tomato paste, the chili paste and stir. Put the water and the mosaic pepper and let it boil for 15 minutes then add salt.

Put in bowls and serve with parsley and lemon. Enjoy!
Nutmeg Foie Gras Souffle

Ingredients:

  • 30 gr butter
  • 30 gr flower
  • 160 ml milk
  • 100 gr foie gras
  • 2 eggs
  • 5 gr nutmeg
  • Salt and pepper to taste
How to do it:
Step 1
Melt the butter in a pan, then add all the flower at once and stir. Pour the milk over the butter and flower and stir until it becomes creamy. Now you can take it off the stove and add salt, pepper and nutmeg. Add 2 egg yolks and stir, keep the egg whites for later.
Step 2
Cut the foie gras grosiere and add it in to the mixture. Stir well. Beat the 2 egg whites until it becomes a hard foam then add it in to the mixture.
Step 3
Pour in to buttered ramekins and put in the already heated oven at 200 c for 15 minutes, after they are done leave them in the oven with the open door for another 15 minutes. Enjoy!
Pul Biber Menemen

Ingredients:

  • 4 eggs
  • 1 finely chopped onion
  • ½ green pepper
  • ½ yellow pepper
  • 3 medium tomatoes (boiled and skinned)
  • 2 tbls of oil
  • 10 gr of pul biber
  • Parsley
  • Salt and pepper to taste
How to do it:
Step 1
Heat the 2 tbls of oil in a pan and add the onion and peppers. After browning add the diced tomatoes and stir, let it simmer for 2 minutes then add the condiments.
Step 2
Meanwhile in a bowl whisk the eggs until homogenized and add it over the vegetables in the pan and reduce the heat. With a wooden spatula we mix, when the eggs are cooked we remove from heat. Put chopped parsley on top and pul biber. Enjoy!
Smoked Paprika Egg Salad

Ingredients:

  • 5 boiled eggs
  • 50 gr butter
  • 250 gr fresh cheese
  • 50 gr sour cream
  • 10 gr mustard
  • Zest from a lemon
  • Green onion
  • 12 gr smoked paprika
  • Salt and pepper to taste


How to do it:
One easy step
Take the shell off the eggs, in a bowl add only the egg yolks and keep the egg white for decoration. Break the egg yolk with a whisk and add the melted butter step by step, stir until it becomes creamy.

Add over the mixture the remaining ingredient but keep some smoked paprika for decoration. Now decorate how ever you want with the chopped onion, smoked paprika and the sliced egg white. Enjoy!
Sumac Adana Kebap

Ingredients:
  • 1 red pepper
  • 1 red onion
  • 2 pieces of garlic
  • 17 gr of parsley
  • 20 gr of sumac
  • 1 teaspoon of salt
  • 1 tea spoon of sweet paprika
  • 600gr of ground beef
  • 10 gr of chili flakes
  • 2 tbls of olive oil
How to do it:
Step 1
Place the onion, pepper, garlic, parsley, paprika, salt and sumac in a chopper and pulse 3 times then add also the olive oil.
Step 2
The meat needs to be chopped really thin then put it in a bowl together with the chili flakes and mix. Add the mixture from the chopper over the meat and mix until all the meat is flavoured.
Step 3
For 1 kebab we will use 2 wooden spikes for grill that needs to stay in water for 1 hour. Make meat balls from the mixture. Take the 2 sticks and stick into the meat than spread it along the sticks.
Step 4
Put it on the heated grill and turn them constantly so they don't burn, when they are beautifully colored take them out. You can serve them with cuscus, rice or grilled veggies. Enjoy!
Tarragon Potato and Smoked Ham Soup

Ingredients:

  • 1 kg potatoes
  • 2 carrots
  • 1 small celery
  • 1 onion
  • 200 gr of smoked ham
  • 10 gr sweet paprika
  • 10 gr tarragon
  • 1 tsp flour
  • 1 L milk
  • 4 L water
  • 100 ml oil
  • Parsley
  • Salt and pepper to taste
How to do it:
Step 1
Clean all the vegetables. In a pan put the oil and start frying the onion and the carrots then add the paprika and stir at low heat.
Step 2
In a different pan fry the smoked ham then add it over the onion and carrots. Dissolve the flour into the milk then add it in the pan and stir. Add the potatoes and celery.

Put over the water and tarragon then let it simmer for about 1 hour. At the end add parsley. Enjoy!
Turmeric Indian Rice

Ingredients:

  • 300 gr basmati rice
  • 10gr turmeric
  • 2 tsp olive oil
  • 1 hot chili pepper
  • 1 small onion
  • 3 cloves of garlic
  • 500 ml hot water
  • Salt and pepper to taste
How to do it:
One easy step
Wash the rice and let it hydrate in cold water for half an hour. Boil the rice with salt, but not completely (al dente).

Fry the onion, garlic and the chili peppers, when the onion is soft add the rice, turmeric and little by little 500 ml hot water. Add salt to taste. Enjoy!
